Quinoa Salad
Pronounced "KEEN-wah", this is being called a Super food. It is considered a complete protein. Look it up it is just loaded with all sorts of nutrients. The first recipe I tried, I tossed it out. So I thought what am I going to do with all this quinoa that I bought at the bulk food store? So I figured I would just throw it into homemade soups to use it up, I didn't want to waste it. Then I thought I would give it another go, so I just did my own thing with it this time. Remember to rinse your quinoa in a strainer under running water first.
2 cups chicken broth or (2 cups water & boullion cube)
1 cup quinoa
2 green onions
1/4 green pepper
5 cherry tomatoes halved
salt & pepper to taste
Boil water and boullion cube, add quinoa. Turn off heat and let sit for 12 minutes. Let Cool. Add garnishes and refrigerate until ready to use.
Easy, peasy, and quinoa comes in a few other colours as well, so go ahead and experiment. It can be used like a cereal, or a replacement for rice, or in soups and stews. So breakfast, lunch or dinner, so versatile.
I think next time I am going to add some curry to the water. I love curry and rice, so why not.

Jack Rabbit
This post is dedicated to Jack, the rabbit that comes to our door twice a day looking for food. He was just skin and bone when I first spotted him and started putting out rabbit pellets for him. I think he was kicked out of his nest early, he didn't seem to know what to eat. He has even eaten bird seeds that I had scattered out on the ground for the birds. He has been comeing around all summer and has put on some fat, I just hope that he has a home for the winter. He is still very skittish, but will sit at a distance and watch me. There is also a cottontail that has been comeing around before Jack and she is not quite as nervous, although I don't see her during the summer month's, don't know what she does then. I know where her home is, we have some stumps of wood stacked up in a pile and she lives in there.
